Several months ago I read *somewhere* that an easy way to judge the health value of a protein source was to eat "less legs". In other words, soy, veggie & fish = Great! Poultry = good! Beef & pork = not so hot.
Since that time, my family has come to judge food on its *leglessness*. My husband and son go out for male bonding *four-legged nights*. We brag to one another when we have achieved several days in a row of *No-legged eating*. It's actually become a very fun game for all of us, to try new foods, expand our options ... basically to "Re-think Food".
With the variety of health problems our society faces today, it can't hurt to eat as healthfully as possible. I am not a Vegan, but I often do cook Vegan meals. I am not against eating meat for any moral reason, but I am learning how very little of it I need. I know that if I were responsible for actually killing and dressing my own meat, chicken or fish, I would become a full-fledged vegetarian. And after the last few months, I don't think I would mind the transition very much at all.
I decided to start this blog as a place to put the recipes I have found that have been outstanding and to share some of the struggles and successes my family experiences on this journey. We are just a regular old American family, football lovers, church goers, outdoorsmen (and woman), animal lovers ... average in every way except that we try not to eat food with legs. Or rather we try not to eat it often. I look forward to comments, suggestions and maybe even some new great recipes from the blogosphere!
